Watermelon Aqua Fresca

Aqua fresca is a Latin American summer staple and the best thing that you can have on hand on a hot summer day.



First you need to make a simple syrup. To do this mix the sugar with one to one with 1/2 cup of water in a saucepan. Stir until all the sugar is dissolved. Remove from the heat and let the mixture cool.


Cut the watermelon in corse chunks, small enough that if firs into a blender. Add 2 cups of water to the blender and blend until smooth.


Place a strainer on a large bowl and slowly pour the watermelon slurry through the strainer. You may want to agitate and press the slurry through the strainer until most of the liquid passed through. Discard the contents of the strainer.


Add simple syrup to the watermelon water and fill into appropriate container.


Place into fridge to cool throughout. Serve over ice.
